It's Beginning To Feel A Lot Like Fall!

Last night I made my apple and onion grilled chicken. It smelled wonderful and honestly, once I had it on the plate, it left me wishing Thanksgiving was here!

After we ate, we all painted our pumpkin gourds. They aren't done yet, they are a work in progress! I'll showcase the finished product soon. Promise. Right now, you can enjoy the start:

My dear,you cannot show a wonderful looking chicken like that and not share how to make it. Recipe please!

Chop up two apples and one onion. Melt butter, stir into apple&onion mixture. Add rosemary and oregano. Stuff into chicken cavity, you'll have some left over.

Preheat oven to 425, and roast chicken for 5 minutes on each side.

Remove from oven (turning down to 350)

Take remaining melted butter, add pepper, garlic powder, and oregano. Brush all over top of chicken, wings and legs.

Cook until chicken reaches an internal temp of 160. Pull chicken out, and baste with juices. Add remaining apple&onion mixture to the pan with chicken.

Place back into oven and cook until 175. Remove from oven.

Let sit for 5 minutes to lock in juices
